Cider Brined and Glazed Turkey

Missy wanted this recipe from Epicurious.
Both RaChelle and I have made this turkey two years ago with great success. I am going to use it again this year, I think.

um, so excited. question: in the gravy, can I just use apple cider instead of applejack brandy or the like? i might get kicked out of the family if i serve my in-laws alcohol-laden gravy... :)

YES! I didn't buy brandy or anything like that - it was too expensive and I wouldn't use it for much else. But, for the record, the alcohol will cook out of the dish...

YOU know that, and I know that. But last year when we got wine for a gift and Jason told his mom we saved it to "cook with" instead of pouring it down the toilet, well, I'm not sure that she would agree! :)

btw, i LOVE this!
